Sometimes figuring out what we are going to have for dinner is the most challenging part of my day. The days I work off the farm I try to put something in the crockpot before I leave. It's one last thing to worry about when I get home. This past week I found my self pondering over breakfast what to put in the crockpot that day. Since we are having temperatures in the 90's this week, I wasn't in the mood for a roast or chicken with carrots and potatoes. Those are cold weather meals. I didn't have time to do some research. Looking through the freezer and fridge I came up with an idea to make bar-b-que chicken in the crockpot. It went something like this, throw a bunch of boneless skinlesss chicken breasts in the crockpot (still frozen in this case). Sprinkle some garlic powder on top. Pour a decent amount of bbq sauce on top. Set crock pot on low and walk away. When I came home 10 hours later the house smelled good. I took the chopper I use for browning hamburger and broke the chicken breasts up. I then put the crockpot on warm while we finished chores. At dinner time we had shredded chicken on buns with some coleslaw I made the night before. It tasted delicious. I know that my spur of the moment idea for dinner was a good idea when the boys comment at dinner time, "Mommy this is really good. Can you make it again?" I probably will when that morning comes again that I don't want to cook roast beef again.
